Bahay Buko 2026

This April, through the Filipino American Chamber of Commerce of Greater Nevada (FACCGN) Las Vegas joins the nationwide celebration of Filipino Food Month with a series of landmark events that spotlight the creativity, heritage, and culinary excellence of Filipino chefs, restaurateurs, and cultural voices from across the U.S.

1. FLIPSIDE at Truffles N Bacon

April 15  / Wednesday  /  5:30 PM
Truffles n Bacon Café
Truffles N Bacon introduces Flip Side is a playful pivot—where Filipino comfort food slips into a modern, streetwise groove without losing its soul.

Think Smashed Longganisa Tacos, where the garlicky sweetness of the sausage meets crisp edges and soft tortillas; or a Chicharon Cobb Salad that balances indulgence with freshness, each bite crackling against cool greens. The Mang Cesar Salad Wrap layers the familiar brightness of a Caesar with the smoky, citrus-kissed depth of Chicken Inasal, while Bistek Tagalog reappears with a sleeker, more composed finish—still tangy, still deeply savory, but dressed for the moment.

Even the vegetarian options hold their own—thoughtful, not afterthoughts—proving that Flip Side isn’t just a remix, but a reimagining: Filipino flavors, turned just enough to surprise, yet grounded enough to feel like home. This we call Caesarian salad, of course, with a dash of humor and a dig of whimsy.
